Risotto Fiori di Zucca

Nonna used to prepare risotto in many different ways. Her favorite one was with zucchini flowers. I’ve revolutionized her recipe, giving it a touch with prosecco. Don’t miss this carnaroli risotto class!

Ingredients

– 2 full hands or arborio or carnaroli rice
– 6 zucchini blossoms
– 2 zucchine
– 2 tbsp of shaved parmiggian cheese
– 1/2 tsp of saffron
– 1 small red onion
– Basil
– 1/2 small bottle of Spumante
– Olive oil
– Salt
– Pepper
– 1Burrata cheese ball (regular size)
