Olive oil is one of the main ingredients of the Italian cuisine, and believe it or not, the olive oil that you use may completely change the flavor of the dish that you are preparing. 

Extra virgin olive oils are not all the same. Choosing a good one is not easy. Its quality is measured by the scents and aromas it releases to the nose and the palate. Among the most common and recognizable scents of an excellent extra virgin olive oil are grass, artichoke, tomato, almond, green apple, spiciness and intense balsamic notes.
